In this week-long intersession, we will be exploring Southern Culinary Landscapes. Just like looking out onto a familiar view, there are parts of Southern food that some of us may already know, just from the experience of living in North Carolina. You might be imagining a landscape full of biscuits, or maybe one big biscuit, covered in butter. Perhaps you’re thinking about gumbo, fried chicken, black eyed peas, or sweet potatoes, but what about collard greens in curry or carnitas with fried okra? In this intersession we’ll be exploring how these foods, and so many more, become part of “typical” Southern cuisine. We’ll investigate the foundations of natural Southern “food-scapes,”gaining understanding of the connections between regional ecosystems, history, and politics.
